Meet Our Chef
Peter Andino was born and raised in NYC, where he learned to cook at an early age by watching his grandmother and mother cook in their small apartment kitchen in Queens. By mixing his grandmother’s classic Central American cuisine with his mother’s flare for creativity, Peter developed a palate for a broad spectrum of cuisine at a very young age.
After graduating from The New York Restaurant school, now known as the Arts Institute, chef Peter spent time in Terrance Brennan’s flagship restaurant Picholine, working under then chef d’ cuisine David Pasternak (Esca), where the focus was always on exceptional ingredients and perfect execution. When Peter’s tour of duty at Picholine ended, he spent time in other small restaurants looking for the right fit before joining the team at the famous Waldorf Astoria. There Peter was able to hone his skills as a Saucier and Sous Chef in different types of global cuisine while serving dignitaries and heads of state.
One of Peter’s key roles at the Waldorf Astoria was to lead and execute the exclusive Chef’s Table dinners, hosted by then Executive chef John Doherty, these were exclusive dinners held in the heart of the main kitchen of the hotel and included a cocktail hour and a 5 course dinner with wine pairings. Peter then took the Executive Sous Chef position at the Westin Times Square, which opened the door for him to acquire the position of Executive Chef of the W New York, the original and largest property in the brand.
Peter then made the big decision to move to the Big D and took the helm of the kitchen at the W Dallas Victory in beautiful and up & coming Victory Park. Armed with over 20 years of culinary experience, chef Peter looks for new ways to reinvent classics in a new light while maintaining a focus on quality ingredients and proper execution. Whether its an intimate dinner for 2 in one of the hotels beautiful suites or Haute cuisine for 200 in the W Dallas’s “best view in town” roof top event space Altitude, chef Peter still draws from his culinary roots passed down from his mother and grandmother to create beautiful food that instills a new and lasting memory.
